How to Brew a Perfect Cup of Black Tea

Bring fresh cold water to a full boil.  Measure one teaspoon of tea per cup.  If you want stronger tea, use more tea.  Brewing it longer may make it bitter.  Pour boiling water over leaves. Let steep three minutes.  Discard (or compost) leaves.   Add milk, lemon, or sweetener to taste.

How to Brew a Perfect Cup of Green or White Tea

Bring fresh cold water to a full boil.  Remove from heat and let cool briefly. Measure one teaspoon of tea per cup.  Don’t overfill the infuser.  Crowded leaves make bitter tea.  Pour hot water over leaves and let steep for two to four minutes. Do not agitate leaves; this makes green tea bitter.  Most green teas can be infused multiple times before the flavor disappears.  Just pour more hot water over the leaves and steep slightly longer. Add sweetener or lemon to taste.

How to Brew a Perfect Cup of Fruit or Herbal Tisane

Bring fresh cold water to a full boil.  Measure one heaping teaspoon per cup. Pour boiling water over tisane and steep for 3 to 7 minutes.   Unlike tea, tisanes do not become bitter with longer brewing times.  Add lemon or sweetener to taste.
